A successful evening smoking last weekend's Rainbows.

Smoked Rainbow Trout

Summertime means all kinds of great fishing in the Pacific NW. But what do you do when you've had your fill of rainbow trout on the BBQ? Smoke it of course! We love smoked fish and rainbows are no different. Great as a snack or for your next dip. Give it a try!


We make ours with a simple brine:


  • water,
  • REAL maple syrup,
  • salt,
  • Chili & Garlic Powder,
  • and don't forget the acid!  Either lemon juice or apple cider vinegar. 


Depending on your taste, let it marinate for 8-24 hours and smoke at 225.  If you fillet yours out like we do, you'll only smoke them for approx. 1-2 hours (depending on the size of the fillet). 

Leaving the fish whole means a longer smoke time of 4-5 hours.
